Recipe Wednesday - CHEQ

V-8 Vegetable Soup
1 Large Jug of V-8 Juice
1 16 oz bag of frozen vegetables
1 half head of cabbage - chopped bite size

1. Put all ingredients in a dutch oven, mixing well.
2. Bring to a boil; lower heat and simmer. Cover.
3. Simmer for approximately 2 hours or until cabbage is soft and translucent.
Serves 5 with a bit of leftovers.

Tip:
-This can be made in a crockpot on low, but you need to add about another half of a bottle of the juice as it tends to evaporate during cooking. Set on low for 6 hours. [No need to bring it to a boil.]
-You can add [dried] cheese tortellini during the last half hour of cooking [either method] - but it doesn't need it, really.

C - Cheap to make [cabbage @ $1.00, veggies @1.00 and V-8 @ 3.50 = $5.50]
H - Healthy - V-8 and veggies? Yep!
E - Easy - [seriously, right?]
Q - Quick - Quick to prepare! And it smells so good cooking.

This sounds like a meh! sort of recipe, but you would be surprised at how delicious it is and how much kids love it. It gets it's kick from the V-8. Serve with a grilled cheese sandwich. Yum!

That sounds super tasty (and easy!), though I couldn't stop giggling about "Dutch oven." Because I'm immature like that and that term isn't normally used in reference to cooking in the Midwest.

Haha, I don't think that's the kind of "Dutch Oven" Emily was thinking about... umm... yeah, a different kind of gas there, Emily ;)
French oven is a term I've seen used but on the Le Creuset website - they're a French company (in name, anyway, not sure of actual origin) so it seems snooty to me. I say "Enameled cast iron pot" to be bratty since I refuse to support Le Creuset ;)
Sounds yum, hey, maybe you can help me pick out a crock pot? I've been really confused over all the features available and am thinking I need a timer (I leave the house at 8:15 and on a good day, get home at 6:30, but many days it's 8:30 or later - from working late, that is - sigh)

No, err, Dutch oven is when someone (usually the boyfriend or husband) farts under the covers and traps someone (usually the girlfriend or wife)'s head underneath. Ummm... yeah...
