Tonight's dessert a la' Skippy:
Whoopie Pies
A New England favorite, Whoopie Pies are two light chocolate cakes filled with a fluffy vanilla icing which can be made with or without marshmallow fluff. I made my filing without fluff [Pooldad doesn't care for marshmallows] instead making 7 minute frosting.It was my first time making them and also the first time I ever tasted the homemade version. I can see what all the fuss is about. They are really delicious. The cake is made with cocoa and isn't incredibly sweet while the filing is very sweet. They complement each other nicely tho' and make a fun dessert on a summer's day. It is an easy recipe and definitely a keeper. :)
Tomorrow night is our town's annual "Slopfest". It is to mark the end of the school year and kids from all the local schools get together where volunteers have created a giant mud pit. The Fire Department is also on hand to provide lots and lots of water and there are usually several dozen people who have cans of foam/whipped cream. It is a very, very sloppy mess and a heck of a lot of fun. Hopefully I will be able to attend and get pictures of the mayhem. It is hysterical to try and pick your own kid out after a while because they all start to look like the same brown, muddy mess. Afterwards the kids all gather in the parking lot and are hosed down, otherwise we might go home with the wrong set of kids. heehee

They look delicious, don't think I've seen such over here. My speciality which I always made when the kids were small, was Cinnamon buns..they loved them...but today I am not baking much, it's only me here...

Recipe for the little cakes please! Or is it just any cocoa cake? How do you make them little? - I don't know if we have fluff here. hmmm
The slopfest sounds fun but I don't envy laundry duty after. As for picking out my own kid - I couldn't tell my kid from any other on the soccer pitch - thank heavens for the numbers on the shirts.
That would be a good idea for our three rivers festival...hmm, perhaps I should foreward this link to Jack Hammer...
a good mud wallow is lots of fun. but what happened to the chocolate cream pie?
They look delicious, but I'm not a big icing fan, so maybe if I mixed icing and cool whip or something.
I went to the Wilton tent sale today and they had pans for making Whoopie pies... I didn't even know they made such a thing.

those look delish! i've eaten them before, but they were called moon pies by the person who made them (probably as a copy of the little debbie moon pie version). very good. is that boiled icing? we used to make that as a kid. i need to find some of my mom's recipes for the old stuff we used to make. you've made me start thinking...

Whoopies are my FAVORITE!!! I used to buy the Devil Dogs because they resemble whoopies. Well that's just great, now my stomachs are churning for some whoopie-goodness. Do I dare buy me a devil dog??
